Pannekoeken!

Clearly I am behind the times! I was telling skating friends about the Dutch pancake I made the other day for the first time, and I was immediately told that this is called a pannekoeken.

Not only that, but there is an actual restaurant chain called Pannekoeken Huis where they serve these. Kari tells me that they cry out “Pannekoeken!” when they bring out your order, but I have yet to believe this. She identified one of these restaurants that is in a shopping center nearby. I drive by there all the time and have never noticed it.

Anyway, mine was delicious.  Here’s the recipe, from Florence Fabricant for the N.Y. Times: 

Pannekoeken

INGREDIENTS

3 eggs
1/2 cup flour
1/2 cup milk
1 tablespoon sugar
pinch of nutmeg
4 tablespoons butter

Preheat oven to 425 degrees.

Combine eggs, flour, milk, sugar and nutmeg in a blender jar and blend until smooth. Batter may also be mixed by hand.

Place butter in a heavy 10-inch skillet or baking dish and place in the oven. As soon as the butter has melted (watch it so it does not burn) add the batter to the pan, return pan to the oven and bake for 20 minutes, until the pancake is puffed and golden. Lower oven temperature to 300 degrees and bake five minutes longer.

Remove pancake from oven, cut into wedges and serve at once topped with syrup, preserves, confectioners’ sugar or cinnamon sugar.

Yelling “Pannenkoeken!” is optional.

  1. There’s one in St. Louis Park on Excelsior Boulevard. It’s a block or so east of the Miracle Mile Shopping Center and Highway 100. And they do yell “Pannekoeken!”

  2. OMG, Jo. I was just looking up pannenkoeken recipes last week! I had the real deal in the late 90s on a trip to Amsterdam and wanted to recreate my meal there. Thanks for sharing this!

  3. Ooh, let us know if the “real deal” is much different from this easy version! Kari says she caramelizes apples and brown sugar in the pan first, and then adds the batter. Sounds yummy!

  4. Nice photo! Welcome to the world of food blogging and worrying about things like the light on your pancake, LOL. I’ve made a big pancake like that, I know it as a “Grand Dutch Baby.” It’s from “The Alice Bay Cookbook” which I’ve had for ages. A good one, it stayed in print for a long time.

  5. Thanks, Mary! My photos of food are often a little off, but at least it’s not as hard to photograph as skating is! I’m glad you have had the pannenkoeken experience–really fun to make. Did you use a blender?
